Cauliflower Soup

Preparation time 15-30 minutes
Ingredients
1 spring onion
Shred cauliflower
Pinch of curry powder
½ tbsp liquid margarine
1 ½ cups vegetable broth
1 cup low-fat milk
Preparation 1. Clean the spring onion and cut it short.
2. Clean the cauliflower and cut it into pieces.
3. Fry the white part of the spring onion with a little curry in the soft margarine.
4. Add the cauliflower and stock and cook for 10 minutes until the cauliflower.
5. Puree the vegetables in a blender or food processor.
6. Thin the soup with milk and bring back to the boil.
7. Stir in the green spring onion rings on.
8. Divide the soup between 2 plates.
